Ecology
Sesame from Hambantota, coconut pressed nine kilometres away, eleven herbs from the garden.
The oil is not a brand. It is a decision made each week. Sesame comes from Hambantota, pale and heavy. Coconut is pressed nine kilometres from here. We warm them with what the garden is actually growing, not what a list says we should.
Eleven herbs sit ninety steps from the therapy rooms. If the neem is thin that month, we use less. If the tulsi is loud, it goes in. A protocol written in Colombo cannot know that.
Guests ask for the same oil they read about. I read the pulse first. Then I choose. The bottle has no label you would recognise.
What we do not use, we do not store. Fresh is slower. It is also the point.

A Sri Lankan plate is already a complete Ayurvedic meal. Our kitchen walks through one lunch.
